Make a sandwich with the bread and all the fillings and seasoning. Spray a skillet with coconut oil, set it over medium heat, and add the butter to melt. Place a sandwich in the skillet and brown on both sides, until the cheese is melty.

Introduction continued....We’re putting the E options here first for three reasons: 1. E meals work great for daytime meals like lunches (they can be wonderful dinner meals, too, but we have most of our E meals during the daylight hours). 2. Too many Mamas don’t eat enough E meals, and this is a quick yummy way to eat one. 3. The E option requires no special ingredients so that’s a no-brainer. Having said all that, the S option for this grilled cheese is equally Ah-mazing . . . so go ahead and enjoy that sometimes, too.

Fill up further with either Speedy Chocolate Milk (page 457) or a baby-size shake from the Shakes and Smoothies chapter (page 468). If having your grilled cheese E style, enjoy with a side of fruit (like cherries). We love a cup of cherries on the side of any E sandwich . . . gives a nice crunchy satisfaction. For S, enjoy a side of berries or sliced cucumbers.
