Instructions

  1. Place the frozen spinach in a large soup pot, cover by 2 inches with water, bring to a boil over high heat, then turn the heat to low and simmer until cooked (takes just a few minutes).
  2. Place half of the spinach in a blender and puree until smooth, using a little of the pot liquid if necessary to blend well. Stir spinach puree back into the soup pot.
  3. Blend the frozen okra, hot water, coconut oil, gelatin, cheese, and miso until smooth. Transfer to the pot and stir to blend.
  4. Add the salt, pepper, cayenne (if using), nutritional yeast, garlic and onion powders, and vinegar to the pot. Stir to blend and simmer for a few more minutes, until flavors are melded.
  5. Taste and adjust the seasonings to “own it.”

Recipe Notes

Serving Ideas: Serve garnished with a small amount pecorino romano  to stay in FP mode.  For a protein boost, add a scoop of collagen to your personal bowl. As you can tell, this soup does not have additional meat protein. It contains a small amount of protein with its inclusion of gelatin and a little cheese. Your children can pile a bunch more grated cheddar cheese in their bowls to up protein a bit (and because they love it) or you can add a little shredded chicken to this soup. But having a lower-protein meal now and then won’t hurt you since most of your meals have ample protein. Your call. Our children love to eat this with lots of buttered Light Rye Wasa crackers.
