This recipe is not in the superfood category as it uses low-carb, store-bought tortillas. You know Serene did not come up with this one. But, it is quick and delicious and fills the space inside that just craves a cheese quesadilla. Quesadillas is part of our "Odds and Ends Lunches" in the original Trim Healthy Mama book. This recipe is on page 307.

Ingredients

Cooking Mode Disabled

Instructions

  1. Layer grated cheese on a tortilla and add any other goodies to your liking such as tomatoes, chicken, ground beef, jalapenos, etc.
  2. Season with salt and pepper and hot sauce if you like it hot.
  3. Top with another low carb tortilla and fry until brown in a skillet with some coconut oil.
  4. Accompany with salsa and sour cream if desired.

Pearl says: "I like using the small sized Mission brand, whole grain, low-carb (3 net carb grams) tortillas for my quesadillas. We sometimes have quesadillas for evening meals for the whole family. I use regular whole-wheat tortillas for the younger children. Charlie, Meadow, and I enjoy the low-carb variety. My husband and I actually think they taste better than regular ones."
