Ranch Hand Taco Salad (E)
Description
This salad is hearty enough to fill up the hungriest ranch hand after working all day! There’s no way you’re going to think you are eating an E meal. Dig in! Brown the meat in a large skillet over medium-high heat. If the meat is not at least 96% lean, once cooked, rinse it very well under hot (better yet, boiling) water to release all the fat. Return the meat to the skillet and add the chili powder, cumin, paprika, garlic powder, onion powder, salt, and water. Simmer for 2 to 3 minutes, then remove from the heat.

Put the chopped lettuce, tomatoes, beans, and corn in a large salad bowl.

Make the ranch dressing. Combine the yogurt, seasonings, and parsley flakes in a small bowl.

Dump the dressing into the large bowl with the salad and mix well to coat. Add the seasoned meat. Toss all the ingredients well. Add the toppings if desired.
