Remove the beet greens. Wash the beets and cut them into large chunks without peeling. Put the beets in a food processor and process until they look like bright red, small-curd cottage cheese. Don’t process the beet greens; place them in a large soup pot with the water, salt, dill, bay leaves, cabbage, onion, radishes, celery, garlic, and the processed beets. Cover and bring to a boil, then reduce to a gentle simmer.
Ladle out about 4 cups of the soup broth (trying not to get veggies with it) into a blender. Add your core Trimmy ingredients: MCT oil, gelatin, collagen (if using), and lecithin (if using). Add all the remaining ingredients (except the sausage). Hold the blender lid down tightly and Trimmy it up nice and smooth. Scrape it back into the soup pot.
Add the sausage to the pot and let everything simmer together for a while so the flavors meld. It should start to lose any pink froth, and a deep red hue will be revealed.
Make your tangy borscht topper. Whisk all the ingredients in a bowl until smooth. Remove the bay leaves from the bisque.
Drizzle a tablespoon of the borscht topper onto your bowl of bisque broth, and lay a lemon slice (if using) on top.
