Aleah Cronk (one of the admins for our social media groups) tried that drink and loved it so much she had the brilliant idea of adding those flavors to our Gluccie pudding. We started making our pudding this way, and, oh, man—it’s blazin’! This recipe is part of the “Gluccie Puddings” series found in the “Sweet Treats – Sweet Bowls” section of the Trim Healthy Mama Cookbook, page 351. The syrup that is pictured as a topping is the Pancake Syrup on page 480 of the Cookbook. This recipe is a multiple-serve recipe that makes 3 to 4 snack or dessert-size puddings.

We started making our pudding this way, and, oh, man—it’s blazin’! Put the almond milk in a blender with the two types of sweeteners, salt, and caramel extract. Start blending on low and then sprinkle in the Gluccie. Blend on high for 1 minute.

Let the blender rest for 30 seconds, then resume blending for another 1 to 2 minutes. Just before stopping, add the whey protein (if using) and blend for another 10 to 20 seconds on high. If it’s not pudding texture yet, don’t worry; the Gluccie will thicken up more after chilling in the fridge for a while.

Pour the pudding into a quart-size yogurt container or into four 1 cup containers with lids. Transfer to the refrigerator.

Note Concerning Adding Glucomannan "Gluccie"... This is a loose pudding; if you want it thicker, use another ¼ to ½ teaspoon Gluccie.
