Satisfying Granola

Servings: 4

Description

This granola makes a great topping for yogurt, or you can have some in a bowl with kefir or unsweetened almond milk, sweetened up a little with one of our plan-approved sweeteners. It is also great in a snack bag when you are out and about running errands.

Instructions

  1. Pour desired amounts of your choice of the following ingredients onto a baking tray: pumpkin seeds, shredded coconut, sunflower seeds, chopped almonds or other nuts, flax and sesame seeds. You may also add a few finely chopped fresh unsweetened cranberries or a small amount of dried goji berries.
  2. Add ½ to 1 cup ground flax to the other whole nuts and seeds (depending on quantity of ingredients). This will allow for some clumping of the ingredients which occurs with most granolas.
  3. Add a generous amount of coconut oil (½–1 full cup) depending on quantity of other ingredients).
  4. Add vanilla and plan approved sweetener to taste (5 to 8 tsp THM Super Sweet Blend or 5 to 8 doonks THM Pure Stevia Extract Powder should suffice).
  5. Bake at 300 for about an hour.

Note

Recipe Notes

To make this granola extra superfoody, soak the nuts and seeds first before adding other ingredients and dehydrate overnight instead of baking.
