Recipe Notes
From page 81 of Trim Healthy Table:
"Extra steps are outta here! Throw all the ingredients in your trusty crockpot and come back in the evening to deliciousness! Now, let’s say your life is extra crazy and you forget to prepare your crockpot meal in the morning but you don’t have an electric pressure cooker. No worries—this can be made in a pot on the stove in about 30 minutes—just brown your meat and onions, add all the other ingredients, and let it bubble away."
___________
ELECTRIC PRESSURE COOKER DIRECTIONS: Cook the meat on sauté mode, then add all the other ingredients. Seal and cook at low pressure for 10 minutes. Use the quick pressure release.
NOTE: This recipe was created and tested using a 6-quart Instant Pot. If you are using a different brand or different size electric pressure cooker, consider modifying the recipe as your results may vary from ours. Example: If you are using an 8-quart, consider adding more liquid as the larger circumference often needs more liquid to come to pressure.)
___________
MAKE A FAMILY MEAL:
- For the weight-loss plan, garnish with just a sprinkle of grated cheese to stay within E fat guidelines and add a dollop of Greek yogurt if desired. You can also sprinkle on a few crushed baked corn chips.
- Growing children or those at goal weight can have this as a delicious Crossover with grated cheese, sour cream, and baked corn chips.
__________
NOTE: If you use ground turkey it must be ultralean (at least 96%) to avoid a Crossover, since this is an E meal and you are not browning then rinsing the meat to release any extra fat. Venison is always lean enough for E recipes if not mixed with other meats, if you would prefer to use that.
