Enjoy Slim Belly Jelly hot or chilled. Delicious swirled over Greek yogurt, Trim Healthy Pancakes, or any of our muffins or breads. This recipe can be found on page 411 of the original Trim Healthy Mama book and page 478 of the Trim Healthy Cookbook. This recipe makes about 2 cups of jelly.

Put the water, 1 cup of the berries, and all the other ingredients, except the gluccie, in a blender and blend well.

Transfer the puree to a medium saucepan and add the rest of the berries. Bring the mixture to a boil, then turn down the heat to a simmer. Depending on whether you want a thicker or thinner jelly, start whisking in the Gluccie; use only ¾ teaspoon for a syrup-like consistency. Use the full amount for a set jelly. This jelly will thicken more as it sits in the fridge.

Taste and adjust the sweetness to “own it.” Keep refrigerated until ready to use.

“Quick Method Instructions" :
1.Put all ingredients into your *blender except for 1.5 cups of the berries.(Barbara used the entire 1.5 tsp of glucomannan.)
2.Turn the blender on high and let it go for about 5 minutes or until the mixture is thick and almost boiling
3. When the jelly has reached the consistency you want, pour out the mixture onto the remaining 1 cup of berries and stir.
** Please note that Barbara uses a Vitamix blender that has the ability to heat contents up. If you do not have a Vitamix blender you could still try this quick method by using water that is "just off the boil". Vitamix users can also consider using water "just off the boil", as it would decrease the blenders run time.
