Trim Healthy Mama and the crockpot work wonderfully together. This classic dish oozes comfort and flavor. Sadly, it is usually a waistline exploder because the rich, creamy sauce is traditionally paired with starchy noodles. You won’t miss a thing when you make this the smarty pants way. Sadly, it is usually a waistline exploder because the rich, creamy sauce is traditionally paired with starchy noodles. You won’t miss a thing when you make this the smarty pants way. It is still ultra-flavorful and ultra-comforting. You’ll simply choose from your favorite on-plan noodle option. This recipe is found in the Trim Healthy Mama Cookbook, on page 44.

Instructions

  1. Lay the beef in the crockpot, then sprinkle the Baking Blend over the meat. Add the onions, garlic, broth, and seasonings.
  2. Put the mushrooms on top. If using, lay the Not Naughty Noodles over the mushrooms.
  3. Cook on low heat all day or on high heat for 5 to 6 hours.
  4. Fifteen minutes before serving, whisk in Gluccie, then add sour cream.

Note

Don’t buy expensive meat for this recipe. Buy the cheapest cuts you can find. The slow, long cooking time will tenderize the meat beautifully. If you have hunters in your family like we do, don’t be afraid of using venison here. It works perfectly.

FOR FREEZER-TO-CROCK PREP: Label 2 freezer bags as “Smarty Pants Stroganoff – S,” using a Sharpie. Place the meat in one bag. Blend the broth or stock with all the seasonings and the Baking Blend, then place in the second freezer bag. Add the onion. Write “needs mushrooms” on that bag as a reminder. Place both bags in the freezer. The morning before cooking (24 hours prior), put the meat and sauce bags in the refrigerator to thaw. Next morning, pour off excess fluid from the meat and place the meat in the crockpot. Add the mushrooms, then add the sauce.
