Melt 1 teaspoon of the butter in a large skillet over medium-high heat. Add the onion, sausage, and diced zucchini (or bell pepper) and brown for 2 to 3 minutes.
Move the veggies and sausage to the very edge of the pan. Add the remaining 1 teaspoon butter to the skillet, followed by the noodles or Troodles. Allow the noodles to brown over high heat, tossing them for a couple minutes. Now toss all the ingredients in the pan together for another minute or so over high heat. Sprinkle with Creole seasoning and pepper flakes (if using) to taste. Add the cream and Parmesan, reduce the heat to medium, and toss for 1 more minute. Taste to “own it.”
