They think salad doesn’t fill them enough, but they never complain about this one nor the other two in this chapter. Smoked Sausage Salad

Instructions

  1. Put the lettuce and spinach in a huge bowl. You want lots and lots of greens to start with, as they wilt down a lot. Pour the oil, vinegars, sweetener, and liquid aminos over the leaves and toss well. Set aside.

  1. Melt the butter in a skillet over medium-high heat. Add the diced sausage pieces and toss well for a few minutes until they get nicely browned and a bit crispy.

  1. Preheat the oven to a high broil. Spray a baking pan with coconut oil and add the nuts. Sprinkle them with the cayenne pepper (use just a little if you don’t like things too spicy, or coat them well if you are a spice freak like us) and pour on a squirt or two of liquid aminos and toss. Broil for just a couple minutes, or until the peanuts start to brown . . . don’t let them burn.

  1. Toss the greens once again. Add the cheddar and mix it in a little. Top with the sausage and peanuts.

MAKE A FAMILY MEAL:

  • This salad really needs only a bread and butter side. You can use Wonderful White Blender Bread (page 242) or Fifteen-Minute Focaccia Bread (page 247). If you’re still hungry, end with a baby-size shake from the Shakes and Smoothies Chapter (page 468).
  • Growing children or others in Crossover stage can enjoy a buttered pita or sprouted-grain bread or fruit as a side.
