All you need is an E side like baked sweet potatoes or brown rice and you have dinner! If you don’t have a large family and would prefer to use this for single-serve meals, halve the recipe and you will get three protein-rich meals out of it. A quick idea is to spread it on toasted sprouted-grain or artisan sourdough for an E. If you’d rather eat it in a bowl alone or pair it with Wonderful White Blender Bread (page 242) to stay in an FP-mode, have at it. This salad keeps well and the flavors just keep getting better.
