This makes a large layered, moist cake that works well for birthdays or other festive occasions. It’s a bit more pricey using store-bought coconut flour, and other superfood ingredients, so we save it for special occasions. It’s a Serene inspired recipe, so a very nourishing treat for your body, full of the best fats the earth has to offer. This recipe is also found in the THM Cookbook on Page 309.

Instructions
-
For the Icing
-
Pour the coconut milk into a blender. Add all the remaining ingredients and blend well. Transfer the icing to the refrigerator, where it will thicken and set as hard as butter (might take a few hours).
-
For the Cake
-
Preheat the over to 350 degrees F. Lightly coat two 9-inch square baking pans with coconut oil spray,
-
Put the flour, flax meal, cocoa, TH Super Sweet Blend, and baking powder and soda in a large mixing bowl and whisk together.
-
Blend the eggs, coconut oil, coconut milk, and vanilla in a blender, then add to the mixing bowl.
-
Combine all ingredients well, then let the batter sit for 5 minutes.
-
Divide the batter between the prepared pans and bake for 30-35 minutes. Let the cake layers cool, then remove them from the pans and place one cake on a stand or large plate.
-
Allow the icing to soften a little at room temperature so it becomes spreadable. Spread a thick layer on one of the cakes, then top with the other cake. If there's enough icing left, you can put a thin layer on the sides and top of the cake.
