Make whatever crust you are using, letting it cool if it’s a baked crust.

Put the water in a small saucepan. Sprinkle the gelatin over it and allow to sit for a few minutes while the gelatin dissolves.

Place the strawberries, nut milk, heavy cream, and sweetener in a food processor and process well until smooth.

Turn the heat under the gelatin to medium-high and bring to a simmer, stirring to dissolve. Pour the mixture into the food processor along with the extract and process well for another minute or 2. Pour the pie filling into the crust, quickly spreading it with a spatula, then refrigerate for an hour or 2 before eating.
