Preheat the oven to 350°F if baking the muffins. Lightly coat an 8-cup muffin tin with coconut oil spray

If using frozen strawberries, take them out of the freezer to thaw slightly while you mix your other ingredients.

Combine the Baking Blend, Super Sweet Blend, egg whites, extract (if using), cottage cheese, and baking powder in a large coffee mug for microwaving or in a small bowl if baking.

Cut the strawberries into small pieces with a sharp knife. Add to the batter.

Microwave for 1 minute 40 seconds, or divide the batter into 2 of the muffin holes and fill the other holes with water (for a nice steaming effect).

Bake for 15 to 17 minutes, or until just cooked through.
