Preheat the oven to 350°F. Lightly spray an 8-inch square baking pan or 8- or 9-inch round cake pan with coconut oil.

Trim the yellow squash on the ends (no need to peel), then cut into a couple of chunks and throw into a food processor and process to the size of rice. Add the strawberries, eggs, butter, Baking Blend, sweeteners, baking powder, baking soda, and strawberry extract and process until well combined.

Pour the batter into the prepared pan and bake for 35 to 40 minutes. Let the cake cool in the pan or remove to a wire rack.

Meanwhile, make the frosting. Blend all the ingredients in a blender on high until thickened. Place the frosting in the fridge until the cake is cool.

Frost the cooled cake, just on top if still in the pan, or on the top and sides if unmolded.
