SERENE CHATS: The sunny golden hue of this soup and the hearty Southwestern flavors make you want to smile after a long, hard day. It features slow-burning, energizing carbs to put a bit of pep back into your evening, and it bursts with a happy sweetness that will bring a grin as it’s gobbled up. My family loves it with Artisan Sourdough Bread (from Trim Healthy Mama Cookbook) or sprouted-grain bread toasted, cubed up, and thrown in. It’s slimming, it’s sunny, and superduper yummy. . . . Yeehaaaaw! This recipe is found in the "Big Eats Soups" section of Trim Healthy Table Cookbook. This recipe is a family-serve recipe that feeds 6 to 8 people.

Brown the ground meat in a large skillet over medium-high heat. If the meat is not at least 96% lean, rinse it thoroughly under very hot water to get all the extra fat out of it. Set the meat aside.
Place the carrots, onion, and garlic in a soup pot with 5 cups of the water. Cover and bring to a boil. Reduce to a simmer and cook until the veggies are tender.
Ladle 2 cups of the hot broth into a blender and add the Trimmy ingredients: ghee, gelatin, collagen (if using), and lecithin (if using). Add the liquid smoke, cumin, lemon juice, Cajun seasoning, stevia powder, salt, chipotle powder, cayenne, and nutritional yeast (if using). Blend until smooth and creamy and return the puree to the soup pot.
Now put three-fourths of the tender veggies into the blender along with the remaining 1 cup water. Blend until nice and smooth and return the puree to the pot. Add the chicken broth, black beans, tomatoes, meat, pepper flakes, and cilantro and bring to a perfect serving temperature. Taste and adjust the flavors to “own it.”
