Instructions

  1. Make the meatballs. Combine the ingredients except the butter and mix well. Form into small meatballs (they cook faster than large ones). Figure on each person getting about 5 meatballs (except for little tykes, of course).
  2. Sauté the meatballs in the butter until cooked through and crispy, about 7 minutes. They will be squished tight into your skillet, but it is faster to get them all cooked at once if you can manage that; they will shrink and create more room as they cook. Turn the meatballs to brown on all sides, then transfer to a paper towel–lined plate.
  3. Make the sauce. Melt the butter in the same skillet, leaving all the crispies from the meat, and add the Baking Blend; whisk well until thickened. Add the broth and seasonings, then whisk well and bring to a simmer.
  4. Put 1 teaspoon of Gluccie in an empty salt or spice shaker, and shake over the sauce in the pan, whisking well at the same time. Simmer until the sauce becomes thickened somewhat, then add the sour cream and whisk well again.
  5. Return the meatballs to the skillet and simmer until they are cooked through (about 10 minutes). The sauce will thicken even more as it simmers. Add more broth if it gets too thick.

Serving Ideas:
Enjoy over  Troodles (page 222), Spaghetti Squash (page 224), or with rinsed and drained Not Naughty Noodles or Not Naughty Rice. Now-and-then Drive Thru Sue’s may want to enjoy this over Dreamfield's pasta; however, don’t opt for that choice every time you make this.
