In a large bowl, stir together all dry ingredients.

Blend almond milk, softened butter, eggs, and vanilla in a stand mixer using a whisk attachment.

Pour the dry mix into the wet and blend.

Finally, add coffee and blend till smooth.

Line 2 standard muffin tins with 20 wrappers and fill ⅔ full with batter

Bake for 20-25 minutes at 350°F.
Frosting

Mix the cream cheese in a stand mixer using a paddle attachment until smooth.

Add Gentle Sweet XF, strawberries, and extract to the mixer and blend till smooth.

Change to the whisk attachment.

Pour in cold, heavy cream and whip at high speed until stiff.

Add pink coloring (if using) and mix until a nice, light pink is achieved.

Fill one 16” icing bag, coupler, and 1M tip with strawberry frosting.

Pipe a star in the middle of each cupcake. Swirl frosting around the star three times,

creating a soft-serve ice cream appearance.

Poke a toothpick into the top of each berry.

Melt all ingredients in a double boiler, stirring until smooth. OR make up a batch of

Dip each berry till it’s ⅔ covered in chocolate.

Flip and poke into a styrofoam block. Repeat with all remaining berries and

refrigerate.

Once the chocolate is hardened, place one berry on its side on top of each cupcake.
