Toss the bagged coleslaw with the cilantro and green onions in a very large salad bowl. If not already seasoned, sprinkle the cooked chicken with Mineral Salt and pepper, then add to the salad and toss.
Make the dressing. Whisk together all the ingredients in a small bowl.
Add the dressing to the salad bowl and toss well so the dressing drenches through all the veggies and chicken. Allow it to sit for 2 to 3 minutes, then toss again. Taste and adjust if needed. Perhaps you need more soy sauce or salt or sweetener or ginger? Top with the almonds, sesame seeds, and avocado (if using).

Depending on how big the eaters are in your home, you will choose to use either 2 or 3 bags of the coleslaw. If you have leftovers, all the better; this makes for a great leftover lunch. If you prefer, you can use a large head of cabbage, finely sliced, and 2 shredded carrots in place of the bagged coleslaw.
