This recipe is perfect for cheaper, tougher cuts of meat as the crockpot magically tenderizes them. You can buy a frozen box full of cheap steaks at bulk stores like Costco much less expensively than fresh. Aldi has good prices for them, too. In a perfect world, grass fed meat is optimum. Wives who are lucky enough to have hunters for husbands could use venison cuts. You can find this recipe on Pages 309-310 of the Original Trim Healthy Mama book.
Tender Beef Stew

Ingredients
Instructions
-
In the crockpot, place enough cuts of thawed meat such as sirloin, venison, or grass fed beef to feed the whole family.
-
Add large pieces of green or red peppers, onions, 2” long cut celery and carrots (the carrots are for your children, unless you are going to use only a few as an S helper). You may also add chunks of cabbage, but that will be too soft unless you add in just a few hours before meal time.
-
Depending on how large your family, add 2–3 (6 oz.) cans tomato paste. For a spicier flavor, add an optional jar of salsa (containing no sugar or corn syrup).
-
Season with a generous amount of sea salt, a few squirts of Bragg Liquid Aminos or Tamari/soy sauce, onion powder, lots of black pepper, and optional cayenne pepper or hot sauce to taste.
-
Add 1 cup water for each can of tomato paste and turn crockpot to high and cook all day.
-
Before serving, add a swirl of cream, or a dollop of tahini to the stew. This cuts the acidity of the tomatoes, mellows sharp flavors, and brings out the depth of the meaty undertones.
