Instructions

  1. Preheat the oven to 350°F. Lightly coat an 8-inch square baking pan with coconut oil spray.
  2. Make the cake. Trim the zucchini, chop into a few pieces, and process in a food processor so it is not mush but broken down well into very tiny pieces. Add the remaining cake ingredients and process until well combined.
  3. Pour the batter into the prepared pan and bake for 35 to 40 minutes, or until golden brown on top.
  4. While the cake is cooling inside the tray, make the frosting. Blend all the ingredients in a blender until thickened (or shake in a tightly sealed jar for a minute or two until thickened). Spread onto the cake inside the tray.

  • This cake really is so easy—all the ingredients go in your food processor.
  • Zucchini makes baked goods moist and delish, but many recipes get all fussy with it. They make you shred it, then salt it, then squeeze out the water—grrrr. Who has time for all that?
  • Let’s make use of the great moisture zucchini brings and just throw it in the food processor.
  • It’s the THM way to take the easy road...
