Mix all the ingredients except the cooking spray in a bowl, using a whisk or a fork. Using a spatula, scrape the batter into a coconut-oil-sprayed waffle iron (see manufacturer’s instructions) and spread out carefully to fill the waffle form.

Cook until golden brown and cooked through, according to manufacturer’s instructions.

"If you want to make a breakfast sandwich with 2 waffles(as in the Waffleized Breakky Sandwich, page 241), omit the egg, vanilla, and sweetener. Use ¼ cup egg whites in place of the egg, since you’ll be using a whole egg in your sandwich. You can also add any savory flavorings of your choice, like grated Parmesan cheese, onion or garlic powder, or crumbled dried rosemary."
