"Growing up in New Zealand, which is a land of sixty million sheep and only 3 million people, you can bet a big Shepherd’s pie was frequently on our dinner table. We come from a long line of sheep keepers and our Grandfather won the Guinness book of records for the fastest time shearing a sheep ( couldn’t help boasting for a minute). Our childhood shepherd’s pie was made with ground lamb. It was ultimate comfort food dished out by our Mother and we can never forget the smell of the lamb, seasoned with rosemary filling our home. Lamb is so expensive here in the US, so we use beef or venison to make this dish to feed our big families. If certain members of your family are not too keen on Mashed Fotatoes, make up just half the batch of Mashed Fotatoes and split the filling into two smaller baking dishes. Top one with Mashed Fotatoes and one with regular mashed potatoes. That’s an extra step that we don’t do, but it may keep the peace in some homes and peace is a wonderful thing!
