Pearl says, “Coming from Down Under, the pairing of fish and tacos was never part of our early culinary experience. I was 40 before I first tasted them but one bite and I was a goner! That road side stand used fresh, ocean caught fish but I’ve still been able to have delicious success at home using inexpensive frozen tilapia by incorporating the other fresh flavors and ingredients used like cabbage, cilantro and fresh lime juice.” This recipe is found in the “Extra Skillet Stuff” section of our Trim Healthy Mama Cookbook. Wonder Fish Tacos

Instructions

  1. Put the cilantro in a food processor and process until fine but not pureed. Transfer to a bowl and mix with the sour cream, then add the lime juice and set aside.
  2. Sauté the fish in a large skillet as directed for the E version (on page 171), but using 2 tablespoons butter for each batch.
  3. Stuff the wraps with the fish, cabbage, and avocado slices, then top with the sour cream mixture, followed by a drizzle of hot sauce (if using).

"It’s a good idea to pre-make your Wonder Wraps earlier in the day or week . Wonder Wraps keep well in the fridge so if you have an afternoon or evening free, spend some time Wonder Wrappin' (or get a spare teenager to do it).  The other option is to only use Wonder Wraps for yourself and those in your family who are not needing to watch their weight can use regular, whole-grain, soft or crunchy tacos. And… while these are called “Wonder Fish Tacos,” if a Drive Thru Sue used a store-bought, low-carb tortilla (or 2 small ones) in place of Wonder Wraps… I’m sure not going to yell at her but let’s not tell Serene."
