Preheat the oven to 375°F. Spray a 9 × 13-inch baking dish with coconut oil.

FOR THE PROCESSED VERSION: Put the zucchini pieces in a processor and process until the size of rice. Add the egg whites, cottage cheese, salt, pepper, onion powder, and garlic powder and whiz until well combined. Scrape into the baking pan. Add the bacon bits (if using) and minute rice and mix well.

FOR THE THROW-TOGETHER VERSION: Mix the zucchini, egg whites, cottage cheese, salt, pepper, onion powder, garlic powder, bacon bits (if using), and minute rice together in a bowl, then scrape into the prepared pan.

Sprinkle on the Parmesan. If you want a breading, crumble the crackers or bread over the top. Bake for 40 minutes. Allow to sit for 5 minutes before serving.

MAKE A FAMILY MEAL:
- Although this recipe includes some brown rice, there is room here to add in some more carbs for your E meal. Feel free to mix it into a salad with a lean dressing, have some fruit on the side, or pair with a baby-size E or FP shake from the Shakes and Smoothies chapter (page 468).
- Growing children can have this with extra fat, such as a full-fat dressing on their salad or sprouted-grain bread with butter, to make a Crossover.
