These noodles cook up very quickly and are great with everything from fried eggs to spaghetti sauce to salmon. This recipe can be found in The Trim Healthy Mama Book.

Instructions

  1. Use a Troodle maker (available on our website) or find your own favorite spiral cutter for making the "noodles".
  2. For boiling the noodles: Bring a medium saucepan of water to a boil over high heat. Add the noodles and then allow the water to come back to a boil. Reduce the heat slightly and boil for just a couple of minutes, or until the zucchini noodles release some of their green color into the water. Drain in a colander and press out excess water.
  3. Toss the noodles with a little butter (less than 1 teaspoon for FP)and salt and pepper if desired.
  4. For sauteing the noodles: Spray a medium skillet with coconut oil spray or smear with a small amount of coconut oil or butter. Add the zucchini noodles and saute over medium-high heat for just a couple of minutes, or until the noodles start releasing some of their liquid.
  5. Use a slotted spoon to scoop out the noodles so you don't transfer that excess water onto your plate. Season with a little salt and pepper, if desired.

Note


If you're able to cook these up with less than 1 tsp of oil, you can enjoy them as a FP side!
