PEARL CHATS: When I am on vacation, my favorite Crossover breakfast to order at a restaurant is fried eggs over skillet potatoes (hash browns). I just love the taste and textures and how the soft eggs mingle messily with the potatoes. But that is for sure not a weight-loss meal due to the starchy potatoes mixing with the fat from the whole eggs. I found I can get the same satisfaction making this an S-style meal using a yellow squash or a zucchini as the hash. This way is so good and so slimming! Heat 2 teaspoons of the butter in a large skillet over medium-high heat. Add the squash, sprinkle with the seasonings, cover, and cook. Cover the pan for a minute or two to get the squash cooked more quickly.

Uncover, push the squash to one side of the pan, and add the remaining 1 teaspoon butter. Crack the eggs into the melted butter, season them, and fry according to how you like them. Once the squash is tender, put it on a large dinner plate and top with the eggs, then drizzle on hot sauce if desired.
