A couple of very smart ladies had the brilliant idea to beat the eggs whites first, which took the cake to a whole new world of fluffier texture! This recipe and the following two are awesome new versions of BAM cake. Enjoy BAM for an energizing breakfast or for a snack. Peanut Butter Banana Bam Cake

Instructions

  1. Preheat the oven to 350°F. Lightly coat an 8-inch square baking pan or a 9 × 13-inch baking dish with coconut oil spray.

  1. Measure out ½ cup oats and set aside. Grind the remaining 1½ cups oats to a flour in a blender.

  1. In a bowl, beat the egg whites and cream of tartar (if using; or xanthan gum) until soft peaks form.

  1. Mash the bananas in another bowl, then add the ground oats, whole oats, peanut flour, salt, baking powder, baking soda, sweetener, yogurt, and extracts and mix well. Finally, fold in the egg whites.

  1. Pour the batter into the prepared pan and bake until golden brown on top, 40 minutes in the smaller pan, or 30 minutes in the baking dish.

Recipe Notes

NOTE: You can also prepare this the original way and not bother to beat the egg whites. Simply mash the bananas and add all the other ingredients—still great.
