Savory Skillet Oatmeal or Quinoa

Servings: 1

Description

This recipe is a cross between a hash brown and a seasoned oatmeal pancake. It’s another great way to add even more protein to an oatmeal or quinoa meal. This is a great go-to meal for when your cupboards are bare and you've not yet done your grocery shopping. Also a great way to use up leftover oatmeal or quinoa. See the Recipe Notes below for tips and serving suggestions. Savory Skillet Oatmeal or Quinoa can be found in the original Trim Healthy Mama book on page 231.

Instructions

  1. In a bowl, mix cooked leftover oatmeal or quinoa with the egg whites.
  2. Season with mineral salt and pepper, or creole seasoning for a savory flavor. Add in leftover diced veggies. Mix ingredients well.
  3. Ladle a big scoop into lightly greased, nonstick skillet and brown on both sides like a pancake. You could also stir it around until cooked through like a scramble.

Note

From page 231 of the original Trim Healthy Mama book:

For the E-Version: If you don’t want to sauté veggies in the savory version of this recipe, use the egg whites, seasonings and oatmeal. When done, top with diced tomato and a very small dollop of grated skimmed mozzarella cheese. Yum! This is a quick E lunch too—and cheap!

For a S Helper-Version: If you are at S Helper stage, you can enjoy a greasier “soul food” version of this recipe. Use only ¼ cup of the cooked oatmeal per serving with more egg whites or a full egg or two and go heavier on the seasoning. This way you can really “fry it up good” with a larger amount of butter or coconut oil.

_______________

Pearl chats: My daughter, Meadow, makes a mouth-watering S Helper-version of this recipe. She adds cayenne pepper for a kick and creates a delicious crisp on either side by using a little butter along with coconut oil. When eating this recipe Meadow’s style, you almost feel like you are at a State Fair and are indulging in a deep fried fritter.  Oh, yeah! She has a knack for taking recipes to the next level. Remember, if you are in S Helper stage, but don’t want to halt weight loss, use no more than 1⁄3 cup of the oatmeal since this version is much heavier on the fats.
