Peppers are bursting with vitamin C and disease-fighting flavonoids and antioxidants. They are a perfect partner for protein- rich eggs. As written, this is a single-serve breakfast for yourself, but you might be inspired to make more as this is a fun way to serve up fried eggs to your children! This recipe is found in the “Breakfast & Baked Goods, Blood Sugar-Balancing Breakfasts” section of the Trim Healthy Table Cookbook, page 332.

Instructions

  1. Melt the butter in a skillet over medium heat. Add the pepper rings to the pan and cook for about 1 minute to start softening.

  1. Add an egg to each “pepper hole.” Season well and cook for a couple minutes, then flip the eggs (or cover the pan and steam them, no need to flip). Cook until the eggs are the desired consistency, either still yolky or hard.
