Snatch ’Em Up Chicken Tenders

Our children are gobbling machines when it comes to these tenders! They snatch them up so quickly that if we don’t hide a couple somewhere for ourselves, we’ll be out of luck. If you have children or teens (or perhaps husbands) who turn their noses up at the idea of eating healthy, just serve these up and don’t mention anything about THM or healthy foods! Whisk together the whole eggs and egg whites in a large bowl. Put the chicken pieces in the egg mix and turn to coat well.

Mix together the Baking Blend, Parmesan, salt, black pepper, onion powder, garlic powder, and cayenne on a large dinner plate. Dip the egg-coated chicken pieces into the breading. Coat well, then put them on another plate waiting to fry.

TO SKILLET-FRY: Working in batches, heat 2 generous tablespoons (or a little more) of the coconut oil in a large skillet over medium heat. Brown the tenders on both sides and cook until “done” in the middle. Cook more batches, using 2 generous tablespoons of oil per batch. You should be able to get 3 pounds fried in 3 batches if your skillet is large enough.

TO AIR-FRY: Set an air-fryer to 400°F. Fry the chicken for 15 to 20 minutes, according to the manufacturer’s directions.

TO OVEN-FRY: Preheat the oven to 425°F. Put 2 tablespoons butter or coconut oil on a large rimmed baking sheet, place it in the oven and allow the oil to melt while the oven preheats. Once it’s melted and bubbling, take the baking sheet out and spread the fat around the sheet evenly. Place the chicken tenders on the baking sheet, spray the tops generously with coconut oil, and bake for 18 to 20 minutes.

Choose from the skillet-fry (our reliable favorite method), air-fry, or oven-fry methods. By the way, if you’re penny-pinching, the frugal flour option (page 40) works great for this recipe, so no need to use up your Baking Blend.

MAKE A FAMILY MEAL:
- For the weight-loss plan, dip these tenders in ketchup (preferably sugar-free) or honey-mustard
sauce (such as the sauce from Make It Again Chicken on page 217). Enjoy with buttered, steamed broccoli or cauliflower on the side and a fresh side salad. - Children can get their carbs for a Crossover with a piece of fruit.
