If the iPhone can have upgrades, so can a couple of our standard recipes. This is version 2 of our original Wonder Wraps. If you love the first version, we won’t hold it against you for being loyal to it (as it has fewer ingredients), but these have a lovely neutral flavor with no hint of rubbery egginess (we never found the original rubbery, but we got the odd bit of feedback about it… sniff). This is the Big Batch version of Wonder Wraps 2. This recipe is found in the “Breads, Wraps, Biscuits, and Loaves” section, on page 251 of the Trim Healthy Table Cookbook.

Instructions

  1. Whisk together the egg whites, psyllium flakes, Baking Blend, salt, hot sauce, Parmesan (if using), and water in a small bowl. Let it set up for about 3 minutes while you heat the griddle.
  2. Heat a nonstick electric griddle (you can find nontoxic ones these days) to about 300°F or a good nonstick pan to medium heat and lightly spray with coconut oil.
  3. Put 2 rounded tablespoons of batter on the griddle and spread it out using the back of a spoon. Keep spreading until it reaches the size of a regular 4 to 6 inch tortilla. Flip after the first side is golden and brown the second side for about a minute or so. Repeat making wraps, spraying the griddle with oil each time.

For newbies... these wraps can revolutionize your world. They are gluten-free, low in carbs, low in fat, and low in calories, but high in wonderfulness. They make fast, no-think wraps for lunches for home or work, and they are sturdy enough to hold up well when stuffed with meats and veggies. Stuff them with chicken, avocado, and tomato, or make burritos and wrap them around seasoned beef, sour cream, salsa, and onion. Any way you would use a tortilla, you can use a Wonder Wrap in the same manner. We love stuffing them with a little cooked chicken and grated cheese, rolling them up, then putting them right back on the griddle with a little melted butter and crisping and melting them right up. Rocking snack or lunch! It is a great idea to make up a big batch (see the Big Batch variations) to have in the fridge for quick meals.
