Ingredients
Instructions
- Preheat oven to 350 degrees.
- With a melon baller or small knife, scoop out some of the center of each zucchini slice to create a small bowl shape. Place slices on a foil lined baking sheet.
- Fill each slice with a small spoonful of your Blue or Feta cheese.
- Add optional turkey bacon bits (or you can use pork).
- Top with tomato slices, Parmesan cheese and a sprinkle of salt & pepper.
- Optional: drizzle with a little bit of Extra Virgin Olive Oil.
- Bake at 350 for 7 to 9 minutes or until cheese melts. Keep an eye on them so they don’t burn.
- Remove from oven and top with fresh basil leaves, (use little ones or roughly chopped bigger leaves)
Note
- Zucchini makes a perfect side dish due to it's mild flavor and here's the wonderful part - it is super low in carbs and calories so you can really dig in and eat a bunch of it. It has wonderful anti inflammatory effects on your body and is high in manganese which increases the levels of superoxide dismutase (SOD) in your body, that's the enzyme responsible for protecting the mitochondria (the energy source of your cells) against oxidative stress.
