Zucchini Pizza Bites

Description

Zucchini Pizza Bites are quick easy and delish!! You got 5 minutes? You got pizza . . . along with a nice amount of slimming veggies! Trim down while you enjoy every bite. This recipe is a single-serve recipe. "Zucchini Pizza Bites" is found in the "Hangry Meals" section of Trim Healthy Table, page 315.

Instructions

  1. Preheat the oven to high broil.
  2. Spray a large skillet with coconut oil and heat over medium-high heat. Add the zucchini rounds and sprinkle lightly with salt and pepper. Lightly brown each side for just a minute or so, then transfer to a baking sheet.
  3. Smear each zucchini round with pizza sauce, followed by mozzarella, pepperoni (and any other topping options), and a sprinkle of Italian seasoning. Broil for a couple minutes, or until the cheese is bubbling. (Watch that they don’t burn as this happens very quickly.)
