Instructions

  1. Preheat the oven to 425°F. Spray a large rimmed baking sheet with coconut oil.
  2. Meanwhile, cook the bacon in a large skillet over medium heat until crisp (if using turkey bacon, cook it in the butter so it doesn’t stick to the skillet). Add the spinach, garlic, and pepper flakes (if using) and stir with the bacon for a minute or two until the spinach is wilted. Add the cream cheese and water and stir all the ingredients until the cream cheese melts.
  3. Pound the chicken breasts for just a few seconds to flatten a little bit. Place them on the prepared baking sheet and sprinkle them generously with salt, pepper, and paprika. Spoon the creamed spinach mixture over the top of each breast, then top with the grated cheese.
  4. Bake for about 25 minutes, or until cooked through.
