Cream of Mushroom Soup – Single Serve

Melt the butter in a small saucepan over medium heat. Add the mushrooms and onion and sauté for 3 to 4 minutes, until well coated in butter and starting to release a pleasing aroma.

Transfer most of the mushrooms and the onion to a blender, leaving just a few mushrooms in the pan to continue cooking. Add the remaining ingredients except the cream and blend well.

Break apart the larger mushrooms in the pan, then add the blender puree and stir well. Simmer for a few minutes to heat through, then add the cream, and serve.
