- Place the whole radishes in a medium saucepan with water to cover. Bring to a boil, cover, and reduce the heat to simmer until they are tender.
- Drain and place the radishes in a blender (not a food processor). Add the butter, seasonings, Parmesan, nutritional yeast (if using), 3/4 teaspoon Gluccie, and yogurt or sour cream. Process until smooth. (You may need to do this in two or three batches, but you can put the seasonings in only one batch; sprinkle a little Gluccie into each batch to more evenly distribute it.)
- Return the puree to the saucepan and stir well to blend the seasonings while you reheat the mixture. You may even need to sprinkle in another 1/4 teaspoon Gluccie to thicken the mixture, depending on how much yogurt you had added. Taste and adjust the flavors to “own it.”
