This cake is very easy to make and absolutely yummy! We have added a delicious raspberry filling to kick it up a notch for an extra special treat!
Rockin’ Roll Cake

The Rockin' Roll Cake is a Trim Healthy Mama Community favorite that came to us from Jennifer Griffin's blog, A Home with Purpose. This cake is very easy to make and absolutely yummy! We have added a delicious raspberry filling to kick it up a notch for an extra special treat!

For The Cake

First beat the egg whites until they are frothy and forming peaks.

Add the remaining ingredients and gently stir until they are well incorporated.

Place a piece of parchment paper on a baking sheet.

Spread the batter onto your baking sheet.

Bake at 350 for 8 minutes or until the top is turning slightly brown.

Let the cake completely cool before you add the filling.

When the cake is cooled, ice a layer of filling over the cake.

Roll it up, wrap in plastic wrap and chill in the refrigerator.
For The Filling

Heat the berries in a saucepan on top of the stove on low-medium heat until they start to release their juices.

Combine the berries, sweetener and the softened cream cheese in a bowl and mix well.

Set aside.

In a separate container, whip the heavy cream until it thickens and stiff peaks form.

Gently fold whipped cream into berry mixture.

Chill until ready to use.

This makes about two cups of filling which is plenty for the cake.

Options: You can use an extra large baking sheet for one large cake or a regular-size baking sheet to make two smaller cakes. Your choice!
Note: The Rockin' Roll Cake, by itself, is considered a Fuel Pull dessert. Depending on what you decide to fill the cake with you can change the fuel to either an S or an E dessert. The recipe above with the berry cream cheese filling is an S dessert or snack.
