Alfredo Beef and Broccoli
Description
This is a quick meal for nights when you don't want to get complicated. It is also delicious and filling. It is on pages 340-341 of the original Trim Healthy Mama book.

- Brown 3 lbs ground beef in a large skillet and drain off fat, if not using grass-fed beef.
- Season beef with salt and pepper or creole seasoning.
- Add 2 packets frozen broccoli florets to cooked beef.
- Put lid on skillet and let steam broccoli until almost tender, stirring every now and then. If you thaw broccoli before placing in skillet, it will only take about 5 minutes.

Once broccoli is on its way to tender, add 1 1/2 jars of Alfredo sauce, or the same amount of homemade Alfredo sauce, plus 1 cup of water.
- Stir water and sauce into other ingredients and heat, but don't cook so long that the broccoli is over cooked.
- For spice lovers, add cayenne pepper and Creole seasoning to give a wonderful kick.
- Your children can eat this one-pot meal over rice. You can have it over Cauli Rice or on its own. Sprinkle each plated meal with Parmesan cheese.

We like this meal. We think it’s even better when the broccoli is cooked longer. I didn’t have Alfredo so I used heavy cream and cheese. It was good!
