Apricot WOW Spread

This goes great on my Handy Naan Bread from page 262 or the Overnight Biscuits from page 94. It is also an awesome spread on pancakes or even as a topping for ice cream. Instructions

  1. Place everything but the Gluccie, pectin, gelatin, and 2/3 cup of water into a small saucepan, set to medium-high heat. Bring to a boil and then reduce heat to low.

  1. Whisk in remaining ingredients. Once Gluccie and gelatin have dissolved, cook for another 5 minutes. Then place in small glass jars to cool off. Cover with lids and then transfer into the refrigerator to set. Due to the citric acid, this keeps well in the fridge.
