Instructions

  1. Place thawed chicken thighs on a baking tray and sprinkle liberally with Creole seasoning (and cayenne pepper if you like it spicy and hot).
  2. Bake, covered with foil or lid, at 275 for at least three hours until very tender.
  3. Uncover 15 minutes before serving and broil until skin is crispy.
