Melt the coconut oil in a small skillet over medium-high heat. Crack the whole eggs into the hot skillet and pour the egg whites around the eggs. Sprinkle on the seasonings, hot sauce, and cheese. Cook until the whites have set and the underside is crispy. Flip to seal in a soft yolk or cook all the way through, if you prefer solid yolks.

Slide the eggs out onto a large dinner plate. (If you’re not successful at getting it all out without breaking, know that it still tastes the same—no worries.)
