SERENE CHATS: These are great for on-the-go snacks made with our superhero friend, chia. My toddler loves them and calls them “chewies.” Whenever she gets snacky in the car, she yells out for a “CHEEEEWWWWWYYYYYY!!!!! MAAMMMA!!!” The Chewy Chotein Logs recipe is found in the "Sweet Treats - Candies and Bars" section of the Trim Healthy Mama Cookbook, page 390. This recipe is a multiple-serve recipe that makes 10 to 20 small logs, depending on how big you make them.

Instructions

  1. Place all the ingredients except the shredded coconut in a food processor and process until it forms a pressable dough ball that holds its shape. This may not happen at first. You will need to stop the machine and press the crumbles together to see if you can form balls that won’t crumble and are moist but not gooey. You may need to add a tiny bit more water and process some more. If you need your mix to be drier, then add additional cocoa.
  2. Roll pieces of the dough ball into logs using a little water- or oil-moistened fingers. You can choose to roll them in coconut or leave as is. Freeze most of the batch in little throw-in-your-purse baggies but put some in the fridge for snackies for the next few days. Wait until they are chilled and firm before enjoying.
