From Rashida: These are great to have on hand. I love having one or two as an after-lunch sweet treat or paired with a “Collagen Tea” for an afternoon snack. Though I do enjoy them, my mom is the one who goes crazy for these. She loves “CRUNCH” with a passion, and the chia brings that for her! She’s a very expressive person, so when I say she loves these with a passion, you need to believe me. She’ll yell stuff like . . . “RASHIDA!!! THESE ARE JUST OUT OF THIS WORLD AMAZING!!!” And then she’ll go dancing or jumping around the room to demonstrate her enthusiasm. She can’t help it. My mom
is a 6-foot-tall, feisty, and wild redhead who made growing up in our home with my other 9 siblings… well, let’s just say… the opposite of dull! I made her these for part of her birthday present last year because she loves them that much. This year, she’s most probably getting another batch along with some of my new crunch creations. This recipe is found on page 318 of Trim Healthy Future.

Multiple Serve Recipe
Ingredients
Instructions
- Put chocolate into a small saucepan and set to a medium-low heat. Once chocolate begins melting, add coconut oil and the remaining ingredients. Stir until the chocolate has completely melted.
- Put small spoonfuls into mini muffin liners (no need for muffin tins) and then chill in the refrigerator. To speed up the chilling process, put in the freezer.
- Once thoroughly chilled, store covered in the fridge. (When I make them, I’ll store half the batch in a Ziploc bag in the freezer for another week or so.)
