Nothing better than cozying up with a classic peanut butter cookie and coffee on a brisk Fall day! Try this amazing combination of the TH Cookie Mix along with the TH Peanut Flour for an amazing peanut butter cookie!! Enjoy!!

Instructions

  1. Preheat oven to 350°F.
  2. In a small pot, over medium heat, melt butter and peanut butter together. Whisk until smooth and remove from heat.
  3. Pour the butter and peanut butter mixture into a medium-sized bowl.
  4. Add the egg and vanilla. Mix until smooth.
  5. Add cookie mix, peanut flour, and mineral salt. Using a fork, stir ingredients until evenly mixed.
  6. Line a baking sheet with parchment paper.
  7. Pour 1/4 cup of erythritol into a bowl.
  8. Roll rounded Tbsp. sized scoops of dough, into balls. Roll each ball in erythritol to coat.
  9. Place all 12 dough balls onto the parchment lined baking sheet. Press with fork twice, to create a crisscrossed design. Hold the sides of the cookie while pressing to prevent excess cracking.
  10. Bake for 8-10 minutes. Let cool before removing from the tray.
