Nothing better than cozying up with a classic peanut butter cookie and coffee on a brisk Fall day! Try this amazing combination of the TH Cookie Mix along with the TH Peanut Flour for an amazing peanut butter cookie!! Enjoy!!

- Preheat oven to 350°F.
- In a small pot, over medium heat, melt butter and peanut butter together. Whisk until smooth and remove from heat.
- Pour the butter and peanut butter mixture into a medium-sized bowl.
- Add the egg and vanilla. Mix until smooth.
- Add cookie mix, peanut flour, and mineral salt. Using a fork, stir ingredients until evenly mixed.
- Line a baking sheet with parchment paper.
- Pour 1/4 cup of erythritol into a bowl.
- Roll rounded Tbsp. sized scoops of dough, into balls. Roll each ball in erythritol to coat.
- Place all 12 dough balls onto the parchment lined baking sheet. Press with fork twice, to create a crisscrossed design. Hold the sides of the cookie while pressing to prevent excess cracking.
- Bake for 8-10 minutes. Let cool before removing from the tray.
