We know we have gone beyond what is funny with regard to putting two words together to make a title name, never the less… it still pleases us. “Eggatable Scramble” is so much more fun to say than boring old, “Vegetable and Egg Scramble". Instructions

  1. Whisk the egg whites with the Parmesan, salt and pepper, onion powder, and nutritional yeast in a small bowl until light and fluffy.
  2. Coat a small skillet with coconut oil cooking spray and set it over medium-high heat. Put the tomato, pepper, and mushrooms in the skillet and toss for a couple of minutes. Add the egg mixture and toss together with the vegetables until the whites firm up, 3 to 5 minutes.
