For the Enchilada Gravy

Preheat the oven to 350 degrees.

Brown the ground meat and drain excess fat.

Meanwhile, put all enchilada gravy ingredients in the blender and blend well.

Add the enchilada gravy to the browned meat.

Spray a 9x13 inch baking dish with coconut oil cooking spray and start your layering. Begin with a gravy meat layer using half the meat mixture, then a layer of Wonder Wraps, slightly overlapping. Sprinkle half the grated cheese on the wraps,then repeat with the remaining meat mixture. Add a second layer of Wonder Wraps, then the remaining cheese. Finish with the garnish of sliced olives on top of the cheese.

Bake for 30 minutes.

Serene Chats: "You bet I’m not allowing Pearl the official “enchilada” word in her title. My husband’s family is serious about their enchiladas, and the casserole form is always an important dish at birthdays or special occasions on that side of our family. The tradition and love for this dish passed on from my husband to our children so I’ve had to put a lot of thought into how to “trimhealthymamafy” the authentic flavors before my version could pass muster in our home. Pearl threw together a bunch of stuff she saw in her fridge on a whim… what???!!! I had to think and experiment and tweak until I got it perfectly right… that’s why I get to use the word “enchilada” and she doesn’t – nuff said. If the following "trimhealthamamafied" versions were lacking in taste and texture my husband children would SURE let me know but instead they plead for more and fight over the leftovers. Drive Thru Sue’s can use 8 oz. grated sharp cheddar while those who can’t, or prefer not to use pasteurized cheese, can use "Hello Cheese".
