Nothing like the crunch of nachos or tostadas with the zesty flavors of Mexican goodies piled on top. There is no reason why you can’t enjoy all of that on THM. While corn is not a big part of the plan (as it can be a spiker for your blood sugar & is used to fatten animals up), baked products made with corn traditionally soaked in lime can be used occasionally for E as this soaking process helps lower the glycemic index of the corn. While we prefer baked blue corn products, since they are not GMO, they are not always available. If you are not too concerned about GMO, here in the US, Mission brand has recently released baked tostadas that can be used on plan for E. Instructions

  1. FOR E TOSTADAS
  2. Smear the tostadas with a generous layer of refried beans, followed by yogurt. Top with salsa, shredded lettuce, and chicken. If desired, top with diced tomatoes and jalapeños.
  3. FOR S TOSTADAS
  4. Spread cracker shapes with a very thin layer of refried beans (see Note), followed by sour cream or Greek yogurt. Top with salsa, shredded lettuce, and chicken or beef. If desired, top with diced tomatoes, jalapeños, and grated cheese or avocado.
  5. FOR E NACHOS
  6. Put a pile of chips on a plate and pile on all the ingredients listed above for E tostadas.
  7. FOR S NACHOS
  8. Put a pile of broken crackers on a broiler proof plate and cover with grated cheese. Broil for a couple minutes to melt the cheese, then pile on all the other S toppings.

Intro Continued.......... Another (even healthier) option that works fabulously for both E and S versions of nachos or tostadas is to use the Savory Sesame Crackers (page 504). You get to eat 1/6th of that recipe as a FP, which is a nice amount; but if you include more than that, make sure your nachos are an S.

NOTE: While beans are an E fuel, you can use a thin smear of refried beans if making the S-style tostadas, as up to ¼ cup beans can be used in S meals sometimes. Just don’t pile the beans on for S.
